Oh mint chocolate how I love you and you work perfectly in cupcake form. It has taken me a few attempts to get the right amount of peppermint into the icing. Not so subtle that you can't work out what the taste is and not so - these were perfect and foolishly I didn't measure!
Really need a decoration that's more mint appropriate. Something green me thinks! Any ideas?
As a request by my colleague, Sophia, I made these dark chocolate and vanilla cupcakes. The vanilla/chocolate balance is just perfect but did I measure and write down the all important figures? Of course not.
My lesson of the day is to write things down! No more guess work and doing things by eye!

Mad For Mocha!
Possibly the worst post title ever but anyway!
On to the good stuff.....CAKE obviously!
White chocolate mocha - oh my you're heavenly.
Light sponge with a hint of espresso topped with coffee and white chocolate buttercream. Words can not describe....
Continuing the coffee theme we have cappucino which is the same as the white chocolate mocha but with dark chocolate on top.
And lastly a shot of them all together.
I am a very happy cupcaker because these turned out better than I ever imagined.
Come back soon and expect to see more cakes and some fantastic cards made by Jess.

Back To School For The Cupcaker
A selection of cupcakes that I have made for my colleagues.
The first two rows are lemon sponge with a yummy lemon glace icing.
Third row is vanilla sponge with a dark chocolate buttercream swirl and super cute gold star.
Lastly we have vanilla sponge and white chocolate buttercream with a little sugar violet.
I am pleased with how they turned out and certainly had fun making them!

Starry Starry Delight
Today we have the successes of yesterday and believe us they really were a success!
The lightest, fluffiest Swiss Meringue Buttercream on the perfect Vanilla sponge.
SMBC with 72% dark chocolate = rich, gooey, chocolatey heaven with the perfect sweetness from the SMBC.
This time SMBC made with white chocolate. We were stunned by how good these are.
Look at them in all their starry glory!

Swiss Meringue Buttercream Not Quite The Dream We'd Hoped!
12 perfect cupcakes ready to be decorated with silky, smooth, cloud like fluff that is Swiss Meringue Buttercream alas things did not go as planned!
We were aiming for a neat, domed finish in perfectly pastel shades. In reality we got flat, curdled but perfectly pastel shades.
Loving the colours and sprinkles but we think that buttercream is the way forward for our desired neat little humps!
Close up curdled goodness!
OK, so the cakes might not be as we'd hoped but who could complain about spending an hour or so in the kitchen covering everyone and everything in food colouring!
We'll be back tomorrow with today's success.
Off now to remove SMBC from hair!
